Banquet on the Breadline Recipes – Easy and Cheap Homemade Tomato Soup

This homemade tomato soup is a real winter warmer, easy as pie to make, and cheap as chips too!

Ingredients:

1 onion
2 carrots
1 stick of celery
2 vegetable stock cubes (I like the Aldi ones) in 1 pint of boiling water
2 tins of chopped tomatoes
1 teaspoon of cayenne pepper or chilli flakes
2 cloves of garlic
1 good shake of mixed herbs or basil

Method:

  1. Chop up the onion, carrots, and celery and pop them in a pot or large saucepan on low heat. Put a lid over it to trap the heat in.
  2. Allow the vegetables to ‘sweat’ for a bit, making them nice and soft. Keep stirring them around.
  3. Add the garlic, spice, and herbs and mix them in well with a wooden spoon.
  4. Allow the herbs and spices to cook into the vegetables for 5 minutes.
  5. Add the chopped tomatoes and the stock, stirring them in good and proper.
  6. If you like your soup to be a bit more on the runny side, you can have a bit more water.
  7. Bring it all to a boil and then let it simmer on low heat for 20-30 minutes, until the carrots are nice and soft.
  8. Then whizz it all up with a hand blender until it’s to your preferred consistency.

And voila!
